Easy, delicious poached egg and cheese with fresh herbs

About this recipe: This is a recipe I made inspired by famous chef, Jamie Oliver, and many other recipes I have researched online. It is quite similar to other poached egg recipes but I use less ingredients that are sure to be in your kitchen. I used my own choice of herbs, cheese and bread to prepare this recipe. But you can always change up the herbs and the bread that you prefer to use.

Serves: 1 

  • 2 slices bread or 1 bread roll
  • 1/2 to 1 teaspoon butter or margarine
  • 2 eggs
  • 2 to 4 slices cheese (e.g Cheddar, Parmesan)
  • salt and pepper, to taste
  • chopped fresh herbs of your choice, to taste
  • fresh chives, to garnish

  1. Firstly, lightly toast your bread of choice either by grilling or simply putting in the toaster. Butter bread and set aside on a warm serving plate.
  2. Fill a small saucepan with boiling water and bring to a simmer. Crack the eggs individually into small bowls to prevent breaking the yolk.
  3. Create a gentle whirlpool in the water by stirring with a spoon. Slowly tip the egg into the water, white first and allow to cook for 3 to 5 minutes (depending on how liquid or solid you want your yolk to be).
  4. Using a slotted spoon remove the egg from the water and place onto a plate lined with kitchen paper for a moment or two to drain then place on top of the toasted bread. Cook the second egg, repeating the process. Season with salt and pepper and sprinkle with herbs of your choice. Place the sliced cheese on top, garnish with fresh chives (I recommend putting the chives on top of the cheese as they go together nicely) and you are done!


You may have heard this before, but if you haven't try adding vinegar to the simmering water before adding the poached egg to prevent the egg whites from going everywhere!
