Melt the butter in a saucepan over a medium heat. Stir in the rice until it is coated in the butter. Add the spices, salt, bay leaves and fennel and stir in to the rice. Add the boiling water and simmer on low heat for 15 minutes. Do not stir during this time allowing the rice to absorb all the flavoursome juice.
Remove bay leaves, cardamom and cloves if desired and fluff up rice. Serve immediately and enjoy.
I have tried to update the recipe as I made an error in the stock quantity but cannot get any reply. Please double the stock quantity to 700ml with all other items staying the same and you should have perfect pilau rice! Apologies for the confusion - Mike - 09 Jun 2016
