Serves: 4

  • 60g butter
  • 500g long grain or basmati rice
  • 2 teaspoons turmeric
  • 8 green cardamom pods
  • 8 cloves
  • 2 teaspoons salt
  • 3 bay leaves
  • 1 teaspoon fennel seeds
  • 700ml boiling water

Prep:5min  ›  Cook:10min  ›  Ready in:15min

  1. Melt the butter in a saucepan over a medium heat. Stir in the rice until it is coated in the butter. Add the spices, salt, bay leaves and fennel and stir in to the rice. Add the boiling water and simmer on low heat for 15 minutes. Do not stir during this time allowing the rice to absorb all the flavoursome juice.
  2. Remove bay leaves, cardamom and cloves if desired and fluff up rice. Serve immediately and enjoy.

We have doubled the amount of water as requested by MikeMaxwell - the original recipe submitter. Thanks! - 14 Jun 2016

I have tried to update the recipe as I made an error in the stock quantity but cannot get any reply. Please double the stock quantity to 700ml with all other items staying the same and you should have perfect pilau rice! Apologies for the confusion - Mike - 09 Jun 2016

This worked perfectly with white basmati rice. Of course it will not work with brown basmati which needs about 40 mins cooking. - 13 Feb 2016
