    About this recipe: This mousse is light and refreshing and takes very little time to prepare. When I have guests, I serve it in tall glasses for a more sophisticated look and add a few mint leaves for colour.

    Serves: 4 

    • 500g of fresh strawberries
    • juice of 2 lemons
    • 200ml whipping cream, whipped
    • 50g icing sugar

    1. Whizz the strawberries in a blender to make a puree. Add lemon juice and icing sugar and mix again.
    2. Fold the whipped cream into the strawberry mixture. Pour into ramekins or glasses; chill for at least 2 hours before serving.
