Berrylicious oat bars

    45 min

These bars are packed full of fruity goodness. I defy anyone, young or old, to say no to these. Make them your own using any combination of dried fruit.

    Makes: 12 berrylicious oat bars

    • 110g butter
    • 120g runny honey
    • 200g porridge oats
    • 100g dried cranberries, chopped
    • 60g dried strawberries, chopped
    • 20g blueberries, chopped
    • 20g blackcurrants, chopped
    • 2 teaspoons chia seeds

    1. Preheat the oven to 180 C / Gas 4. Grease two loaf tins or one square tin and line with baking parchment.
    2. Melt the butter and honey together in a saucepan over a medium heat.
    3. Meanwhile, combine the other ingredients in a bowl.
    4. When the honey and butter have melted, pour them into the bowl with the dry ingredients and mix until everything is combined.
    5. Transfer the mix to the prepared tin(s) and press down to ensure the mix is level.
    6. Place in the centre of the oven and bake for 30 to 35 minutes until golden brown. Remove from the oven and lift out of the tin using the baking parchment to help you. Cut into bars, leave the bars to cool and set. Mine were a little soft when I tried to cut them so I left them for a few minutes before cutting.
