About this recipe: This is a fun and simple recipe for all the family to do on a cloudy day or even an after school activity. This recipe is a recipe passed down from my nan who loves to bake...enjoy!

Makes: 1 18cm cake

  • 110g (4 oz) caster sugar
  • 110g (4 oz) butter or sunflower oil
  • 2 large eggs
  • 110g (4 oz) self-raising flour
  • 1 to 2 teaspoons vanilla extract (optional)

  1. Preheat your oven to 180 C / Gas 4. Grease an 18cm round cake tin and line with baking parchment.
  2. In a bowl, beat together the sugar and butter until pale and fluffy. Add the eggs one at a time until creamy. Sift in the flour and add the vanilla, if using. Spoon the mixture into the prepared cake tin.
  3. Bake in the preheated oven for 10 to 15 minutes until risen and golden and a skewer inserted into the centre comes out clean. Remove from the oven allow to cool then sit back and enjoy some cake! Yummy!

Really easy wee cake, had no butter,so was able to use sunflower oil,(which I have never used in cake before) I made two and sandwiched together with cream and jam ,loved it - 07 Aug 2016
