    About this recipe: A very easy and flexible vinaigrette that you can adjust to your taste. It tastes wonderful poured over a pear and blue cheese salad, or rocket and red onion.

    Serves: 14 

    • 120ml balsamic vinegar
    • 60ml maple syrup
    • 2 teaspoons Dijon mustard
    • salt and pepper to taste
    • 235ml extra-virgin olive oil

    1. Place vinegar, maple syrup, Dijon mustard, salt and pepper into a blender. Pulse to combine, then add the olive oil in a steady stream while the machine is still running.
    2. Transfer to a clean jar, bottle or jug.
