Easy tabbouleh

    After trying other versions of this famous Lebanese salad, I came up with my own version which I think has the right combination of ingredients.

    Serves: 8 

    • 4 tablespoons lemon juice
    • 1 teaspoon coarse salt
    • 1 teaspoon seasoned salt
    • 1/4 teaspoon chilli powder
    • 120ml olive oil
    • 235ml hot water
    • 100g bulgur wheat
    • 120g freshly chopped flat-leaf parsley
    • 180g diced tomato
    • 75g diced green pepper
    • 65g peeled and diced cucumber
    • 6 green onions, thinly sliced
    • 1 tablespoon chopped fresh mint

    1. Whisk lemon juice, coarse sea salt, seasoned salt and chilli powder together in a bowl. Slowly drizzle in olive oil while whisking rapidly until dressing is thick and creamy.
    2. Pour hot water over bulgur wheat in a bowl; let soak until water is absorbed and bulgur wheat is soft, about 30 minutes.
    3. Mix parsley, tomato, green pepper, cucumber, green onions and mint together in a large bowl. Add bulgur wheat; toss to combine.
    4. Drizzle dressing over bulgur mixture; toss to coat.
