Apple pudding with rum sauce

    This is a wonderful apple pudding cake served with a very yummy rum butter sauce and is ready in about 1 hour.

    Serves: 8 

    • 225g butter, divided
    • 400g caster sugar, divided
    • 2 eggs
    • 250g grated peeled apple
    • 125g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon nutmeg
    • 1 pinch salt
    • 120ml milk
    • 1 tablespoon rum
    • 1 pinch ground nutmeg, or to taste

    1. Preheat oven to 200 C / Gas 6. Grease a large baking dish.
    2. Beat 1/2 the butter (115g) and 1/2 the sugar (200g) together in a large bowl with an electric mixer until light and fluffy. Stir eggs into butter mixture until smooth; stir in grated apple.
    3. Whisk flour, bicarbonate of soda, cinnamon, 1 teaspoon nutmeg and salt together. Stir flour mixture into apple mixture; spoon into prepared dish.
    4. Bake in the preheated oven until a toothpick inserted near the centre comes out clean, about 35 minutes.
    5. Heat remaining 200g sugar, remaining 115g butter and milk in a small saucepan over low heat until sugar is melted, about 10 minutes; stir in rum and a pinch of nutmeg just before serving. Serve sauce over apple pudding.
