Quick and easy sweet potato mash

    This is my favourite recipe for sweet potatoes as a side dish for roast beef. It works well with fresh or dried basil and thyme. Add plenty of freshly ground black pepper before serving.

    Serves: 4 

    • 6 sweet potatoes
    • 115g butter
    • 2 cloves garlic, minced
    • 1 teaspoon dried basil
    • 1/2 teaspoon dried thyme

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Place potatoes into a large pot and cover with salted water; bring to the boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
    2. Transfer potatoes to a large bowl; mash butter, garlic, basil and thyme into the sweet potatoes with a potato masher until smooth.

    Really delicious! I wasn't precise in my measurements as I only used 2 sweet potatoes and I just threw in the other ingredients as I felt, but the combination of flavours was very tasty and I shall be making this again.  -  27 Apr 2018
