About this recipe:This is my favourite recipe for sweet potatoes as a side dish for roast beef. It works well with fresh or dried basil and thyme. Add plenty of freshly ground black pepper before serving.

Place potatoes into a large pot and cover with salted water; bring to the boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
Transfer potatoes to a large bowl; mash butter, garlic, basil and thyme into the sweet potatoes with a potato masher until smooth.
