Sweet potato mash with cinnamon and maple syrup

    More and more people are learning that sweet potatoes are a superfood and are trying to eat them more regularly. This recipe is a great start for introducing sweet potatoes to the family.

    Serves: 6 

    • 1kg sweet potatoes, peeled and chopped
    • ½ teaspoon salt
    • 1 cinnamon stick
    • 2 tablespoons pure maple syrup
    • 1½ tablespoons butter or vegetable oil

    1. Combine sweet potatoes, salt and the cinnamon stick in a medium saucepan with just enough water to cover. Boil, uncovered, stirring occasionally, until potato is tender, about 20 minutes. Drain. Discard cinnamon stick.
    2. Return potatoes to pan. Add 1½ tablespoons maple syrup and all the butter. Mash. Serve drizzled with the remaining maple syrup.

    Nutritional note:

    Sweet potatoes are loaded with beta carotene, which helps lower the risk of heart disease, stroke and cancer.

    Pure maple syrup:

    Pure maple syrup is a natural sweetner and has a smoother, more subtle flavour than imitation maple syrups.
