1kg sweet potatoes, peeled and chopped
½ teaspoon salt
1 cinnamon stick
2 tablespoons pure maple syrup

Combine sweet potatoes, salt and the cinnamon stick in a medium saucepan with just enough water to cover. Boil, uncovered, stirring occasionally, until potato is tender, about 20 minutes. Drain. Discard cinnamon stick.
Return potatoes to pan. Add 1½ tablespoons maple syrup and all the butter. Mash. Serve drizzled with the remaining maple syrup.
