Vegan tzatziki

    This vegan tzatziki using soya yoghurt is cool, refreshing and in every way as delicious as its non-vegan counterpart. Enjoy with falafel or perhaps as a dip.

    Serves: 6 

    • 1 large cucumber
    • 1/2 teaspoon salt
    • ground pepper, to taste
    • 450g natural soya yoghurt
    • 3 cloves garlic, minced
    • 1 tablespoon olive oil
    • 1 1/2 teaspoons finely chopped fresh mint
    • lemon juice, to taste

    1. Peel the cucumbers then cut in half lengthways and scoop out the seeds and discard. Slice the cucumber very thinly, or use a mandoline, and place in a bowl. Add the remaining ingredients and give a good stir. Chill in the fridge for about an hour before serving.
