Tomatoey bacon spaghetti

    Spaghetti in a herby tomato, bacon and Parmesan sauce. Makes for a cheap and filling meal!

    Serves: 4 

    • 400g spaghetti
    • 1 tablespoon olive oil
    • 1 onion, finely chopped
    • 1 red pepper, deseeded and sliced into strips
    • 2 teaspoons garlic puree
    • 8 rashers unsmoked bacon, chopped
    • 500g passata
    • 1 teaspoon mixed herbs
    • 1 teaspoon sugar
    • 2 tablespoons grated Parmesan cheese
    • extra Parmesan for serving

    1. Put a pan of water on to boil, then add spaghetti and cook for 12 minutes.
    2. Meanwhile heat the olive oil in a frying pan, add the onion, pepper and garlic and fry until soft.
    3. Cook bacon in another pan till crisp, then add to the onion mixture along with the passata. Heat through until simmering, then add mixed herbs and sugar.
    4. Drain spaghetti.
    5. Add Parmesan into the sauce and stir.
    6. Combine sauce with spaghetti and stir well to coat. Serve with some more Parmesan on top, and garlic bread if liked.
