Quick and easy tasty plain sponge cake
This is a simple sponge cake recipe - you can serve it plain, or sandwiched with jam to make a Victoria sponge cake, or fill with buttercream for a birthday cake.

- 225g butter, at room temperature
- 225g caster sugar
- 4 eggs
- 225g self-raising flour
- 1 teaspoon baking powder

- Preheat the oven to 180 C / Gas 4. Grease two 18cm (7 in) cake tins and line with baking parchment.
- Combine the butter and sugar in a mixing bowl and beat until light and fluffy. Add in the eggs, one at a time, and beat until pale and creamy. Sift in the flour and baking powder and stir until well integrated. Divide the cake mixture equally between the two cake tins.
- Bake in the preheated oven for 15 to 25 minutes until risen, golden brown and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin for a few minutes before transferring to a cooling rack to cool completely. Decorate as desired when cold.
