Slow cooker Mexican-style beef barbacoa

    Braising steak is cooked in the slow cooker until very tender, then cooked some more in a spicy tomato sauce. Serve with warm tortillas, soured cream and tomato salsa.

    Serves: 8 

    • 1.3kg boneless chuck beef or braising steak
    • 1 onion, chopped
    • 3 bay leaves
    • 1/2 teaspoon ground black pepper, or to taste
    • 2 tablespoons garlic granules
    • 4 tablespoons vinegar
    • 400g tomato passata
    • 30g chilli powder
    • salt to taste

    1. Place the beef, onion, bay leaves, black pepper, garlic granules and vinegar in slow cooker; cover ingredients completely with water. Cover and cook on High setting until meat is very tender and falling apart, about 4 hours.
    2. Remove meat from slow cooker and discard liquid. Return meat to slow cooker; shred with a fork. Stir in tomato passata, chilli powder and salt. Cover and cook on High for an additional 2 hours.

    This turned out great, but I added a few ingredients to the sauce for added flavor; 1/4 cup of white vinegar, 1 chipolte pepper and a couple of dashes of hot pepper sauce. The flavor was fantastic and I would make this again!  -  25 Oct 2011  (Review from Allrecipes US | Canada)
