250g plain flour
4 teaspoons baking powder
1 pinch salt
100g caster sugar
2 eggs, lightly beaten
1 tablespoon lemon zest, or to taste
1 teaspoon lemon juice
1 large Granny Smith apple - peeled, cored and chopped
1 tablespoon sugar
1 teaspoon ground cinnamon

Preheat oven to 220 C / Gas 7. Grease a 12-hole muffin tin or line with paper cases.
In a bowl, sift together the flour, baking powder and salt. In a separate bowl, mix together 100g caster sugar, eggs, butter, lemon zest, lemon juice and milk. Mix the wet ingredients into the flour mixture until evenly moist. Fold in the chopped apples. Spoon into the prepared muffin tin.
Mix 1 tablespoon sugar and 1 tablespoon cinnamon; sprinkle over the tops of the muffins.
Bake for 15 minutes in the preheated oven, or until a skewer inserted in the centre of a muffin comes out clean. Cool 1 to 2 minutes before turning out onto cooling racks.
