Take the outer leaves off the cauliflower and discard. Roughly chop the cauliflower into florets. Blitz in a food processor to form rice-size grains or finely chop with a knife.
Transfer the cauliflower rice to a microwave safe bowl then drizzle with butter and toss to coat. Season with salt and pepper.
Microwave on full power for about 4 minutes, stirring every minute, or until tender. Remove from the microwave and add any veggies or meat that you you fancy, or perhaps serve in place of rice with a curry.
