About this recipe: This version of cauliflower rice is microwaved for speed and ease. As the flavour is quite bland we tend to add loads of cooked veggies or chicken to the mix afterwards.

Serves: 3 

  • 1 head cauliflower
  • 2 tablespoons melted butter
  • salt and pepper, to taste

  1. Take the outer leaves off the cauliflower and discard. Roughly chop the cauliflower into florets. Blitz in a food processor to form rice-size grains or finely chop with a knife.
  2. Transfer the cauliflower rice to a microwave safe bowl then drizzle with butter and toss to coat. Season with salt and pepper.
  3. Microwave on full power for about 4 minutes, stirring every minute, or until tender. Remove from the microwave and add any veggies or meat that you you fancy, or perhaps serve in place of rice with a curry.
