About this recipe:Burgers are so simple to make from scratch and are so awesome to play around with. I’ve made a few different burger variations in my time, but the spicy sun-dried tomato and feta is by far my favourite. Enjoy!
Makes: 6 feta and sun-dried tomato burgers
500g beef mince
1 teaspoon minced garlic
1 whole spring onion, finely chopped
1 handful fresh coriander leaves, finely chopped
1 teaspoon dried chilli flakes
salt and pepper, to taste
150g sun-dried tomato, finely chopped
100g feta, finely grated
1 tablespoon cold water
1 egg, beaten
1 tablespoon olive oil
1 tablespoon breadcrumbs
6 burger buns (I used oat covered wholemeal)
toppings of your choice (e.g. onion, Cheddar, spinach and mustard)

Mash the mince with a fork in a large bowl; add the garlic, onion, coriander, chilli, seasoning, sun-dried tomato and feta and mix well. To the mixture add the water, egg, oil, and breadcrumbs to bind together.
To test, make a small meatball with your hands and fry it up in an oiled frying pan over a medium heat until no longer pink in the centre; use this for your judgement regarding taste for further seasoning etc.
Once happy, roll the remaining mixture into 6 equal sized burger shapes and fry them on medium heat for about 10 to 12 minutes until browned and no longer pink in the centre, turning once to ensure both sides are evenly cooked.
Plonk them in a nice fresh bun with your favourite toppings. Photo for plating inspiration. Enjoy!
If the Feta begins to crumble when grating, use a knife to finely diced OR a food processor.
