Easy peasy buttercream

    This is great to ice/sandwich cakes together. Add flavours if you want. This buttercream can be stored in the fridge for several days, just soften by leaving at room temperature for a little while before using.

    Makes: 1 (420g) batch buttercream icing

    • 140g butter, softened
    • 280g icing sugar
    • 1 to 2 tablespoons milk
    • 1 teaspoon vanilla extract
    • few drops food coloring (optional)

    1. Mix the butter and icing sugar. Add a tablespoon of milk if too stiff. Add the vanilla and mix with an electric mixer. Add a few drops of food colouring if required. Use or store covered in the fridge for a few days until needed.


    I really don't want to tell, but I make loads of mess with the icing sugar.
