Combine all ingredients in a saucepan over low heat and slowly bring to the boil. Once at the boil, simmer until the mixture is reduced to about 60ml (4 tablespoons).
Remove from heat and strain. You can use the essence in your recipe straightaway, or store in an airtight container in a cool, dark place for later use.
