Orange, fig and gorgonzola salad

    I simply love the colour and taste combination of fresh figs, juicy orange segments and blue cheese in this summer salad.

    Serves: 4 

    • 2 heads romaine lettuce, sliced
    • 2 oranges - peeled, pith removed and cut into segments
    • 85g Gorgonzola cheese, crumbled
    • 2 fresh figs, cut into 2cm pieces
    • 4 tablespoons vinaigrette dressing, or to taste

    1. Combine lettuce, oranges, Gorgonzola cheese and figs in a large bowl. Drizzle dressing over salad and toss to coat.

    I've been eyeing my dad's fig tree waiting to get the perfect fig to make this salad...delicious! I didn't have any fresh oranges, so I used mandarin oranges, and they worked out fine. Topped this w/ raspberry vinaigrette...all of the flavors went wonderfully together. I think next time I'll add a bit of red onion too. I will def be making this again~YUM!
