About this recipe: This is a new vegetarian meal I have made, and has been very popular in the 'Birchling' household. If you love vegetarian sausages you'll love this hassle free, scrummy veggie sausage casserole. It's quick, and will definitely warm you from inside out after getting cold. It's a great way for kids (and adults) to enjoy a healthy intake of vegetables. For a more indulgent recipe, try adding dumplings to your casserole.

Serves: 4 

  • 1 to 2 teaspoons olive oil
  • 1 onion, diced
  • 2 sticks celery, chopped
  • 4 vegetarian sausages
  • 1 red pepper, seeded and chopped
  • 100g carrots, chopped
  • 100g button mushrooms
  • salt and pepper, to taste
  • 1 sachet sausage casserole seasoning mix
  • 200ml water
  • 2 teaspoons Marmite®

  1. Heat a little oil on a medium-high heat in a large frying pan. Add the diced onions and chopped celery. Cook on a high heat and stir continuously for a minute until the onion starts to brown.
  2. Chop each sausage into three chunks and add to the frying pan. Cook for a further two minutes. Add the chopped pepper, carrots and mushrooms to the mix. Season with salt and pepper.
  3. Turn down the heat and carefully add the casserole seasoning mix. Keep mixing the sauce as it will appear quite dry at this point. From a recently boiled kettle add 200ml of water to form a thick sauce consistency.
  4. Finally for a boost of taste and flavour, add the Marmite® and mix thoroughly into the sauce. Cook on a low-medium heat for 15 to 20 minutes and your dish is ready to be served.


Serve this dish with rice or if you fancy make your own dumplings to sit on top.
