Rona's easy peasy date loaf

    Adapted from a friend's, (thanks Rona) butter-free date loaf recipe. Dates can be substituted with anything you like, (within reason) I've tried it with cherries and mixed peel. Such an easy recipe anyone can make it, honest.

    • 250g granulated sugar
    • 250g self raising flour
    • 1/2 teaspoon baking powder
    • 120ml milk
    • 1 large egg, lightly beaten
    • 250g dates

    1. Preheat the oven to 180 C / 160 C fan / Gas 4. Grease a 900g (2 lb) loaf tin and line with baking parchment.
    2. Mix sugar, flour and baking powder together in a mixing bowl and add milk. Mix together until smooth. Add the egg, and mix thoroughly whilst adding the dates. Pour into the prepared loaf tin.
    3. Bake in the preheated oven for 45 to 50 minutes or until a skewer inserted in the middle comes out clean. Remove from the oven and leave to cool or can be served warm.


    If the mixture seems too thick, add a little milk. Although butter-free, the loaf is best served warm or cold and spread with butter. Lovely with a cup of tea.
