    About this recipe: If you're me, you would say, "over-ripe bananas in the fruit bowl. Ugh! Disgusting! Let me find a banana cake recipe." This is your lucky day! Here is one!

    Serves: 10 

    • 2 over ripe bananas
    • 200g self-raising flour
    • 4 eggs
    • 200g unsalted butter, softened
    • 200g caster sugar

    Prep:20min  ›  Cook:30min  ›  Extra time:10min cooling  ›  Ready in:1hr 

    1. Preheat the oven to 180 C / Gas 4. Grease a large loaf tin and line with baking parchment.
    2. Mash the bananas with a fork. In a separate bowl, mix all of the remaining ingredients together. Add the banana and mix well. Pour into the prepared tin and smooth the top.
    3. Bake in the preheated oven for 30 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and cool for ten minutes and serve.


    Drizzle with melted chocolate if wanted.
