Easy peasy chocolate cupcakes

    I'm making a birthday cake for my dad and these are the chocolate cupcakes I made. I'm really busy, so I made them and froze them and I will defrost them and pipe them with chocolate ganache!

    Makes: 12 cupcakes

    • 130g self-raising flour
    • 20g cocoa powder
    • 150g unsalted butter, softened
    • 3 eggs
    • 1 teaspoon vanilla extract (optional)
    • 150g caster sugar

    1. Preheat the oven to 180 C / Gas 4. Line a 12-hole muffin tin with paper cases.
    2. Combine all of the ingredients together in a mixing bowl and mix with an electric mixer for 1 to 2 minutes or until smooth and creamy. Alternatively you can mix it by hand. Spoon the mixture into the prepared paper cases, filling only to 2/3 full to allow for a good rise.
    3. Bake in the preheated oven for 20 to 25 minutes or until the skewer comes out clean. Remove from the oven and allow to cool completely before decorating with chocolate buttercream, Nutella® (try my recipe for make your own Nutella®), or other topping of your choice.


    Make sure you've washed your hands before baking. As they say on Junior Bake Off!
