    About this recipe: This recipe has just 3 ingredients. It's fast, easy and these soft cookies are wonderful! It's great for kids that are just learning to bake.

    Serves: 6 

    • 260g peanut butter
    • 200g caster sugar
    • 1 egg

    Prep:15min  ›  Cook:8min  ›  Ready in:23min 

    1. Preheat oven to 180 C / Gas 4. Line baking trays with baking parchment.
    2. Combine the peanut butter, sugar and egg. Mix until smooth. Drop spoonfuls of dough onto the prepared baking tray. Flatten the tops with a fork.
    3. Bake cookies in preheated oven for 6 to 8 minutes. Try not to overbake - these cookies are best when they are still soft and barely brown on the bottom.
    4. Let cookies cool for 5 minutes before serving.

    I made these today, did balls about the size of a 2 pence piece and flattened them with a fork. Only got 9 on the tray so had to do 2 batches and when they spread they were touching each other. First lot took 15 minutes, second lot I did for the same but didn't watch them and they burnt but are still edible. The first batch are absolutely delicious and I don't even like peanut butter. I got 18 out of it and am going to make some next time I'm at my market stall to sell. As a coeliac they are a brilliant gluten free treat, and for others a lovely lactose free treat too. They are moreish though! But also easy peasy. Mine are about 3 inches wide.  -  12 Jan 2017


    Very easy. I used a teaspoonful of dough for each cookie, rolled into a ball then flattened with a fork. Cooked at 180 for 10 mins, you must leave them to cool on the baking tray otherwise they fall apart. The recipe made 29 cookies, each a little bigger than an Oreo. I will definitely be making these again!  -  22 Nov 2016
