Mixed citrus vinaigrette

    This is a fantastic salad dressing made with white balsamic, olive oil, grapefruit, orange, lemon and lime juice.

    Makes: 175 ml

    • 1 tablespoon white balsamic vinegar
    • 1 tablespoon orange juice
    • 1 tablespoon grapefruit juice
    • 1 tablespoon fresh lime juice
    • 1 tablespoon fresh lemon juice
    • 6 tablespoons olive oil
    • 2 tablespoons toasted walnuts, chopped
    • 2 tablespoons grated Pecorino cheese
    • salt and freshly ground black pepper to taste

    1. Mix together the vinegar, orange juice, grapefruit juice, lime juice and lemon juice. Slowly add the olive oil while whisking vigorously. Add the walnuts and grated Pecorino cheese and stir. Season with salt and pepper.

    Loved this recipe. I didn't add the romano or walnuts to the dressing, but added them to the salad once it was tossed with dressing. I toasted the walnuts.     This dressing is delicious! My fruit was not terribly sweet, so I added a few drops of honey. I tossed it with half spinach, half mixed greens, and some orange and grapefruit segments, but didn't use nuts or cheese. So fresh, so light.
