About this recipe: This frosting can be any fruit flavour for which you can find freeze dried fruit powder. I've found blueberry, strawberry and raspberry on ebay so far. The colour is beautiful and the flavour is out of this world and all using fruit powder. No colours or flavours required. Time to make - 10 minutes.

Makes: 1 550g batch fruit frosting

  • 50g freeze-dried fruit powder (e.g. blueberry strawberry or raspberry)
  • 240g unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 400g icing sugar

  1. Using food processor/stand mixer with paddle attachment, beat fruit powder and butter together until smooth. Add vanilla extract and beat again.
  2. Add the sugar 100g at a time mixing well before adding the next. Mix until the frosting is smooth. Use to decorate cakes or store in the fridge until needed for up to 2 weeks.


And its good for you (sort of!), 50g of fruit powder is a lot of fruit in 5 a day terms 50g strawberry powder is equivalent to seven and a half portions of fresh fruit 50g raspberry powder is equivalent to four and a half portions of fresh fruit 50g blueberry powder is equivalent to four portions of fresh fruit.
