The best vanilla cupcakes

    An awesome but simple recipe. Decorate as desired with icing, buttercream or even a lovely lemon glaze.

    Makes: 12 to 17 cupcakes

    • 170g butter, at room temperature
    • 170g caster sugar
    • 170g plain flour
    • 4 eggs
    • 1 teaspoon baking powder
    • 3 pinches ground cinnamon

    1. Preheat the oven to 180 C / Gas 4. Line 2 12-hole muffin tins with paper cases.
    2. Combine all of the ingredients in a mixing bowl and beat until well combined. Spoon the mixture into prepared paper cases, filling up to 2/3 full to allow for a good rise.
    3. Bake in the preheated oven to 10 15 minutes, or until risen, golden brown and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool on a cooling rack before decorating as desired.
