Place the lentils in a saucepan and pour over enough hot water to cover (about 1 large jar full) and 1/2 teaspoon salt. Add the onion, garlic and bay leaves and give a stir. Bring to the boil for 20 minutes then add the olive oil and vinegar and cook until the lentils are tender. Remove from the heat and allow to cool a little before serving.
