Lentils soup

    Very healthy soup for vegetarians. Serve with a crusty warm roll on the side for mopping the bowl clean.

    Serves: 4 

    • 500g lentils
    • 1/2 teaspoon salt
    • 1 large onion, chopped
    • 1 head garlic, cloves chopped
    • 2 bay leaves
    • 1 tablespoon extra virgin olive oil
    • 1 tablespoon balsamic vinegar

    1. Place the lentils in a saucepan and pour over enough hot water to cover (about 1 large jar full) and 1/2 teaspoon salt. Add the onion, garlic and bay leaves and give a stir. Bring to the boil for 20 minutes then add the olive oil and vinegar and cook until the lentils are tender. Remove from the heat and allow to cool a little before serving.
