Easy mushroom risotto for one

    Only me that likes this at home so simple to make. So easy and any remainder of sauce can be used for pasta during the week.

    Serves: 1 

    • 1 teaspoon chopped fresh basil
    • 1 teaspoon chopped fresh parsley
    • 1 teaspoon minced garlic
    • 3 mushrooms, sliced
    • 1/2 onion diced
    • 1 tub shop-bought fresh mushroom sauce
    • 1 bag steam fresh vegetables
    • 1 packet microwave rice

    1. Warm a little oil in a saucepan over a medium heat. Add the herbs and garlic and cook and stir for a minute or two. Add mushrooms and onion and continue to cook for about 5 minutes. Stir in the mushroom sauce.
    2. Cook veg steam bag in microwave for 3 minutes according to the instructions on the packet; once veg is done add to pan with onions. Put rice in microwave and cook for 3 minutes then add to the saucepan. Stir everything through then serve.
