Cheese and Peperami® muffins

    These cheese and Peperami® muffins might end up being too salty for some people, but something special for a breakfast treat.

    Makes: 8 peperami muffins

    • 275g self raising flour
    • 1/2 teaspoon salt
    • 125g Cheddar cheese, grated
    • 100g Peperami®, finely chopped
    • 2 eggs
    • 200ml semi skimmed milk
    • 75g butter, melted

    1. Preheat oven 190 C / Gas 5. Line a 12-hole muffin tin with paper cases.
    2. Sift the self raising flour in to a bowl and add the salt, 3/4 of the cheese and Peperami®.
    3. Whisk together eggs, milk and melted butter then stir into the dry mix. Spoon into the muffin tin, filling to 3/4 full to allow for a good rise. Sprinkle the rest of the cheese on top.
    4. Bake in the preheated oven to 25 minutes, or until risen and golden brown. Remove from the oven and serve hot or cold.


    If your not a fan of Peperami® you could use bacon (smoked or otherwise) and you must cook the bacon first but I would add another 1/2 teaspoon of salt and maybe a little pepper as well or try a different cheese like red Leicester or use some chicken but again it must be cooked first.
