Easy peasy vegan pasta sauce recipe

    Incredibly easy sauce to make, and vegan friendly! This is such a simple and quick recipe, prepared in under 5 minutes. Cook this sauce alongside your pasta.

    Serves: 3 

    • 300g vegan pasta, of your choice
    • 300g soaked cashews (keep the soaking water)
    • 1/2 jar roasted red peppers in water
    • juice of 1/2 a lemon
    • 1/2 teaspoon garlic paste
    • To taste
    • garlic salt
    • hot sauce
    • oregano
    • basil
    • parsley
    • salt and pepper
    • hot paprika
    • onion powder

    1. Bring a saucepan of water to the boil over a high heat. Add the pasta and cook according to the instructions on the packet, or until al dente.
    2. Meanwhile, add all remaining ingredients to a blender or food processor, and blend until the sauce is thick and creamy and has no lumps, you may need to add some of the reserved cashew water to get the consistency you like.
    3. While the pasta is cooking heat the sauce in a saucepan over a medium heat, stirring occasionally, this will cook out the strong raw garlic taste.
    4. Drain the pasta and divide between serving plates then spoon the sauce on top. Serve and enjoy.
