About this recipe: I make it for birthdays and Christmas and it always goes down well especially for the young at heart. It's so easy to make .

Serves: 6 

  • 3 knobs butter
  • 1 tin condensed milk
  • 1 packet malt or any other plain biscuits
  • 1 packet Pascall® Eskimos lollies or fruit puffs, chopped
  • 75g desiccated coconut

  1. Place butter and condensed milk together in microwave or in a pan over a medium heat until butter is melted.
  2. Place biscuits in a blender or kitchen whiz and pulse until biscuits are like fine crumbs. Add butter mixture to this then blend together with chopped lollies. If using Eskimos I chop off heads and feet then add. Making sure that the Eskimos are thoroughly covered. Mixing all the time and when the consistency is right.
  3. Lay a piece of cling film or baking parchment out onto a flat surface then place handfuls of the mixture into the centre. Roll the outside in coconut and roll into a log shape. Place into a loaf tin then chill in the fridge overnight before slicing and serving.
