    These smoked salmon and dill blini are ever so easy to make and ideal for Christmas when the smoked salmon is a mainstay in the fridge.

    Makes: 16 salmon blinis

    • 16 shop-bought blini
    • 1 handful smoked salmon, torn into ribbons
    • 6 to 8 tablespoons soured cream
    • 2 tablespoons chopped fresh dill
    • salt and pepper, to taste

    1. Warm the blini in a dry frying pan over a medium heat on both sides. Remove from the pan and allow to cool a little.
    2. Spoon a little soured cream onto each blin then add a little smoked salmon and some fresh dill. Season generously with salt and pepper. Transfer to a serving plate and serve.
