Salty goats cheese and sweet beetroot make a delicious flavour combination in this easy winter salad. Cut the beetroot and potato slices into heart shapes for a special meal, such as Valentine's day!

2 medium beetroot
2 medium potatoes
1 tablespoon vinegar
2 tablespoons extra virgin olive oil
½ teaspoon salt
75g fresh goat cheese
freshly chopped parsley, to garnish

Pour 2cm of water into a pressure cooker. Insert the steamer basket with the beetroot and the potatoes. Look the lid on pressure cooker; heat until it starts whistling, then turn down the heat and cook for 20 minutes.
Release the pressure and open the lid; remove the vegetables and let them cool down. Peel and slice into 1cm thick slices. Use a heart shaped cookie cutter to stamp out hearts. Transfer into a serving bowl.
Mix olive oil, vinegar and salt together in a bowl; pour on top of vegetables and toss well. Dot pieces of goats cheese on top and sprinkle freshly chopped parsley on top.
