About this recipe: Neil Mugg, Head Pastry Chef at Gleneagles Hotel, has put together a romantic smoked chocolate mousse recipe ready for Valentine's Day. This recipe also works well without the smoke!

Serves: 4 

  • 200g dark chocolate (at least 70% cocoa solids), roughly chopped
  • 120ml warm water
  • 3 egg yolks
  • 140g Italian meringue
  • smoke oil, to taste (optional)

  1. Combine the chocolate and the 120ml water in a double boiler, or in a pan over barely simmering water and stir to melt; remove from the heat and mix until glossy. Allow to cool for 2 to 3 minutes then add in the egg yolks, mix well to emulsify.
  2. Fold in the Italian meringue, maintaining as much air as possible then add smoke oil to taste (add in a drop at a time until desired result is achieved). Transfer to serving glasses and chill in the fridge for several hours until ready to serve.
