125g plain flour
1 teaspoon baking powder
1/2 teaspoon salt
225g mashed bananas

Whisk buttermilk and eggs together in a bowl until evenly blended; set aside. Stir flour, baking powder and salt together in a separate large bowl. Make a well in the centre of the dry ingredients and stir in the buttermilk mixture and mashed bananas, being careful not to over mix the batter (the batter will be lumpy). Let the batter sit for at least 1 minute before using.
Heat a large pan over medium-high heat and lightly grease with cooking oil or spray. Pour about 60ml of batter onto the pan for each pancake; cook until bubbles appear on the surface. Flip with a spatula and cook until golden brown on the other side.
