Banana coconut smoothie bowl

    This banana and peach smoothie contains only natural sugars. It's served in a bowl which allows you to top it with a selection of nuts and dried fruit. I enjoy it with grated coconut, almonds and raisins but feel free to experiment!

    Ingredients
    Serves: 1 

    • For the smoothie
    • 1 banana, divided
    • 80g frozen peach slices
    • 2 tablespoons unsweetened apple sauce
    • 2 tablespoons water
    • 2 teaspoons coconut oil
    • Toppings
    • 1 tablespoon freshly grated coconut
    • 1 tablespoon flaked almonds
    • 1 tablespoon raisins

    Method

    1. Blend 1/2 banana, peaches, apple sauce, water and coconut oil together in a blender until smooth; pour into a serving bowl.
    2. Slice remaining half banana and arrange on top of smoothie. Add grated coconut, flaked almonds and raisins.

    Tip:

    Most of the larger supermarkets sell fresh coconut pieces which are easy to grate.
