Fresh berry cream topped jelly pudding

    I had one of my creative moments and the outcome was this delicious pudding. Allow plenty of time for the dessert to chill before serving.

    Serves: 2 

    • 1 packet lime flavoured jelly (made up to 600ml/1pint)
    • 200g strawberries
    • 200g raspberries
    • 200ml fresh double cream
    • 1 tablespoon icing sugar
    • 1 handful blueberries

    1. Make up the jelly and pour into two or three glasses. Leave to completely set, if it is still watery this recipe will not work.
    2. Put the strawberries and raspberries in an electric blender and blend until a mixed paste.
    3. Put the cream into an electric mixer by itself and blend until it's just starting to thicken then mix in the sugar. Once the sugar is blended in, spoon in the berry paste a bit at a time whilst still mixing so that the cream doesn't become watery. Continue to mix until the cream is thick like a mousse.
    4. Spoon the fruity cream onto the top of the jellies, decorate the top with the blueberries and chill for at least half an hour.
