Healthier vegan tofu chocolate mousse

    I made another recipe for tofu chocolate mousse before on this website, but then I sort of made up this much healthier version which is also vegan. This protein filled recipe is delicious and just as nice as the full fat version (and you can't even taste the banana in it!)

    Serves: 4 

    • 2 small to medium bananas
    • 1 packet silken tofu (e.g. Clearsprings® tofu)
    • a few spoonfuls cocoa or cacao powder (to taste)
    • a few squeezes Choc Shot syrup

    1. Peel the two bananas and place them in a bowl or microwave for 1 minute. This makes the bananas a bit sweeter so you don't have to add any sugar to the recipe.
    2. Once you have microwaved the bananas, put them in a blender and open up your tofu. Drain and squeeze the water out of the tofu and place it in the same blender as your bananas.
    3. Give the bananas and tofu a bit of a whiz in the blender until smooth, then you can add in your cocoa powder and Choc Shot syrup to taste.
    4. Whiz everything in the blender and taste it (yes it is necessary!) so then you can see if the mousse is chocolaty enough for you and doesn't taste too banana-ery or tofu-y, if it is a little bland, simply just add some more cocoa powder or syrup.
    5. Spoon the mousse into ramekins or in a bowl and chill in the fridge for about an hour and enjoy!


    *I got the Choc shot syrup from Aldi because it was cheap there but you can also buy it from Waitrose or Holland & Barrett, but if you don't have any of those stores nearby then you can use normal chocolate syrup but it won't be as healthy and may not be vegan!
