Easy chicken and mushroom pasta

    This is a delicious recipe, bursting with flavour and easy to make. Serve with a salad on the side for a complete meal.

    Serves: 3 

    • 1 garlic clove, roughly chopped
    • 1 knob butter
    • 400g skinless chicken breast, cut in to medium chunks
    • 6 medium button mushrooms, chopped
    • 200g penne pasta
    • salt and black pepper, to taste
    • olive oil, to taste
    • 150g grated red Leicester cheese
    • 100g grated mature Cheddar cheese
    • 1 small handful dried oregano
    • 50ml milk
    • 1 handful fresh parsley, chopped

    1. In a medium to large saucepan warm the garlic and butter, then add the chicken and mushroom to the pot and cook for around 10 minutes, until the chicken is no longer pink in the centre.
    2. In a saucepan bring salted water to boil and add the pasta, cook this as per the packet instructions.
    3. Once the chicken is cooked thoroughly and most of the juice has evaporated set it to one side. Once the pasta is cooked drain, adding some olive oil and salt, mix well.
    4. Now add the pasta to chicken and mushrooms and place back on a medium to high heat.
    5. Add everything else to the pot except the parsley and stir regularly until the cheese and milk create a thick sauce. Season with black pepper.
    6. Take the pot off of the heat and rest for maximum of 2 minutes, stir again and serve. Garnish with the fresh parsley, add some extra grated cheese if desired.
