About this recipe:These energy bites are a deliciously different, no sugar added snack that are quick and easy to make. You can use any combination of dried fruit. I use kitchen scissors to cut up the dried fruit.
Makes: 50 energy balls
240g chia seeds
275g pumpkin seeds
450g unsweetened dried pineapple, diced
500g no sugar added peanut butter
110g unsweetened grated coconut
100g unsweetened dried mango
120g unsweetened dried blueberries
100g milled flaxseed
115g wheatgerm (optional)

Stir oats, chia seeds, pumpkin seeds, pineapple, peanut butter, honey, coconut, mango, blueberries, flaxseed and wheatgerm together in a large bowl; scoop up some of the mixture and roll into a 2.5cm ball. Place on a plate and repeat with remaininig mixture. Transfer the balls to the fridge until set, about 1 hour.
Use gluten free oats and leave out the whetgerm if you prefer to make these energy balls gluten free.
