About this recipe: For all those lemon lovers out there! This is a tart but very refreshing lemon sorbet. It's sweetened with honey so it's perfect for anyone on the paleo diet or if you prefer to avoid refined sugars.

Serves: 6 

  • 415ml water
  • 180ml honey
  • 475ml lemon juice
  • 1 tablespoon lemon zest

Prep:10min  ›  Cook:1min  ›  Extra time:25min chilling  ›  Ready in:36min 

  1. Combine water and honey in a microwave-safe bowl; heat in microwave for about 30 seconds. Stir until honey is dissolved.
  2. Stir lemon juice and lemon zest into honey water; pour into an ice cream maker. Process according to manufacturer's instructions for 25 minutes.
  3. Transfer sorbet into a chilled loaf tin and freeze.
