Tasty fruit scones

    Make some exquisite tasty fruit scones. Gives 8 servings, you can also put some tasty toppings on like jam or butter!

    Ingredients
    Makes: 8 scones

    • 255g self raising flour
    • 1 pinch salt
    • 55g butter
    • 25g sultanas
    • 25g caster sugar
    • 150ml milk

    Method
    Prep:30min  ›  Cook:12min  ›  Ready in:42min 

    1. Preheat the oven to 220 C / Gas 7. Lightly grease a baking tray.
    2. Mix together the flour and salt and rub in the butter. Stir in the sultanas, sugar and then milk to get a soft dough.
    3. Turn on to a floured work surface and knead very lightly. Roll out to about 2cm (3/4 in) thick then use a 5cm (2 in) cutter to cut into rounds. Place on the prepared baking tray. Lightly knead together the rest of the dough and stamp out more to use all of the mix. Brush the scones with a little milk.
    4. Bake for 12 to 15 minutes until well risen and golden. Cool on a wire rack and then serve your delicious fruit scones. You could maybe use some jam, butter or clotted cream for a topping. Enjoy!

    I have made scone before and they haven't turned out that well but these were perfect. I also only could get 6 out of the mixture. I will try adding a little baking powder as suggested next time to get a bit more of a rise but they did taste lovely. I added about 35g of my ready mixture of fruit that I always have to hand (sultanas, cranberries, raisins, cherries and various seeds and brandy) to the mixture.  -  30 Mar 2018

    Very yummy scones. Easy to follow recipe and used mixed fruit. I did as previous reviewers had advised and added some baking powder to the recipe (1.5 teaspoons). They had a lovely rise. Only thing I would say is I only got 5 (and a bit) scones out of the recipe, I made them 2cm thick as said in recipe. I will definitely be using this recipe again. Oh and I put them in at 10 degrees lower as wasn’t sure if it was for a fan assisted oven or not. And they were in for 14 min.  -  26 Mar 2018
