About this recipe: Lovely light and fluffy muffins with a long lasting taste! : ) For best results use bananas that are slightly over-ripe.

Makes: 12 muffins

  • 200g (7 oz) plain flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon bicarbonate of soda
  • 140g (5 oz) caster sugar
  • 2 egg whites
  • 2 bananas, mashed
  • 110g (4 oz) chocolate chips
  • 1 teaspoon almond extract

  1. Preheat the oven to 180 C / Gas 4. Line a 12-hole muffin tin with paper cases.
  2. Sift the flour, baking powder, salt, ground cinnamon, bicarbonate of soda and caster sugar together in a bowl. Add the egg whites, bananas, chocolate chops and almond extract and mix together until smooth. Spoon the mixture into the prepared paper cases, filling to 3/4 full to ensure a good rise.
  3. Bake in the preheated oven for 25 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before enjoying.
