Preheat the oven to 180 C / Gas 4. Line a 12-hole muffin tin with paper cases.
Sift the flour, baking powder, salt, ground cinnamon, bicarbonate of soda and caster sugar together in a bowl. Add the egg whites, bananas, chocolate chops and almond extract and mix together until smooth. Spoon the mixture into the prepared paper cases, filling to 3/4 full to ensure a good rise.
Bake in the preheated oven for 25 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool before enjoying.
