Oat, date and orange cookies

    Cycling home into a cold wind I started to think about cookies. I thought how wonderful it would be to sink my teeth into something oaty-spicy, while at the same time giving my body something nourishing. So back home I looked what we had in the cupboard, and concocted this! The finished result was shared with a hardworking engineer, and the verdict was "whoaaa...when are you going to make more?". The quantities of ingredients here make 6 cookies.

    Makes: 6 cookies

    • 30g salted butter
    • 30g white sugar
    • 30g self-raising flour
    • 30g oats
    • 5 finely chopped dates
    • 1 tablespoon mixed peel
    • 1/2 tablespoon ground cinnamon
    • 1/2 teaspoon allspice
    • finely grated zest of 1 easy peeler clementine or satsuma
    • 1 egg yolk, beaten

    1. Preheat the oven to 170 C / Gas 3 (this may require some trial and error, you know your oven best). Line an oven tray with greaseproof paper.
    2. Melt the butter and sugar together in a saucepan over a low heat. I turned the heat off while half the butter was still solid, so it wouldn't overheat and would melt in the residual heat.
    3. Mix the self-raising flour, oats, dates, mixed peel, cinnamon, allspice, and zest.
    4. Stir the dry ingredients into the saucepan with the molten butter and sugar. Mix well (it will be very crumbly), then put the mixture in a different bowl so it is not too hot. Then, mix in the beaten egg yolk.
    5. Form the mixture into walnut-sized balls with your hands, put them on the oven tray, and flatten them. They won't change their shape much.
    6. Bake for 12 minutes (until fairly firm but not hard - just try them after 10 minutes and check again every couple of minutes, ovens can vary a lot). This is the hardest step: leave them to cool for 5 minutes before tucking in!
