About this recipe: This filling, energising salad bowl is loaded with quinoa, beans and hard-boiled egg for a vegetarian meal with great sources of protein.

Serves: 1 

  • 65g finely chopped kale
  • 90g cooked quinoa
  • 120g chickpeas
  • 1/2 red pepper, chopped
  • 1 carrot, grated
  • 1 hard-boiled egg, chopped
  • Dressing
  • 1/2 lemon, juiced
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon maple syrup, or to taste
  • salt and freshly ground black pepper to taste

  1. Arrange kale, quinoa, chickpeas, red pepper, carrot and egg in a bowl.
  2. Whisk lemon juice, olive oil, parsley, mustard, maple syrup, salt and pepper together in a small bowl until dressing is well mixed. Pour dressing over salad.
