Potato boxty

Serve as part of an Irish breakfast or as a potato side dish. A great use of leftover mash.

Can I ask why you would cook the potatoes in their skins and then remove them? Why not peel them first?  -  14 Mar 2011

This was a simple recipe but was a little bland. If I try it again I will consider adding some finely minced onions to boost the flavor a bit.  -  31 Mar 2012
