About this recipe:
Serve as part of an Irish breakfast or as a potato side dish. A great use of leftover mash.
225g (8 oz) potatoes, cooked in their skins
225g (8 oz) grated raw potatoes
350ml (12 fl oz) buttermilk
200g (7 oz) flour
1 teaspoon bicarbonate of soda
salt and freshly ground black pepper to taste
butter for frying
- Remove skins from cooked potatoes. Mash with buttermilk. Add grated raw potatoes, flour, bicarb, salt and pepper.
- Scoop onto hot, buttered frying pan to make cakes 7cm (3 in) in diameter. Pan fry until golden and crispy.
Can I ask why you would cook the potatoes in their skins and then remove them? Why not peel them first?

This was a simple recipe but was a little bland. If I try it again I will consider adding some finely minced onions to boost the flavor a bit.
