    About this recipe: This is a very easy and delicious summer vegetable side dish. Breadcrumbs add a little crunch while paprika adds a touch of spice!

    Serves: 6 

    • 2 medium courgettes, quartered and cut into large pieces
    • 4 medium potatoes, peeled and cut into large chunks
    • 1 medium red pepper, seeded and chopped
    • 1 clove garlic, sliced
    • 60g breadcrumbs
    • 4 tablespoons olive oil
    • paprika to taste
    • salt to taste
    • ground black pepper to taste

    1. Preheat the oven to 200 C / Gas 6.
    2. In a medium roasting tin, toss courgette, potatoes, red pepper, garlic, breadcrumbs and olive oil together. Season with paprika, salt and pepper.
    3. Roast the vegetables for 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and golden brown.
