About this recipe: This is such a quick and easy way to enjoy a healthy snack. Simply drizzle or toss kale in olive oil and crisp up in the microwave. Everyone's microwave is different so start off by cooking them for 1 minute, then more until you find the perfect timing and texture for you.


Serves: 4 

  • 1 bunch clean and dry kale leaves - ribs trimmed away and discarded and chopped into 5cm pieces
  • 1 tablespoon olive oil, or to taste
  • sea salt to taste

  1. Arrange kale pieces on microwave-safe plates so they do not overlap. Drizzle olive oil over the kale pieces (or toss to coat them in oil if you prefer); season with sea salt.
  2. Cook each plateful of kale in microwave oven until crispy, for 1 or 2 minutes per batch.
